A rare delicacy, sturgeon fish from Finnish Lakeland, is landing onto fish lovers’ plates. Carelian Caviar has started the production for sturgeon meat in Finland.

*Fresh, frozen and hot or cold smoked fillets, 200-900 g

Sturgeon production utilises waste heat

Carelian Caviar has started the production of sturgeon meat in Varkaus, Finland. The meat will be launched in the market during 2007, and the sturgeon fillets will be sold to restaurants and can also be found on the first-rate fish counters. Carelian Caviar cultivates primarily Siberian sturgeon (Acipenser baerii) and beluga (Huso huso).
