Our story

 

We are the exclusive producer of delicious Carelian Caviar, a luxurious sturgeon roe farmed in the clean, crisp Savonian region of Finland. Our caviar is silky in the mouth, with a perfectly integrated saltiness and a long finishing tone of lake and sea. In the tradition of fine caviar, the Savonian experience is transportive, passionate and intense.

What sets us apart are our innovative and environmentally sound production methods. Over the past 100 years, the wild sturgeon that produce precious caviar have sadly been subjected to over-fishing, to the extent that they are almost depleted. This lead to open-air pond sturgeon farming which, although productive, has been found to have damaging environmental effects on the rivers and seas nearby.

Being an entrepreneurial group of Finnish fish farmers, we naturally wondered, could sustainable sturgeon be farmed indoors? Our farm in North Savonia, the heart of beautiful Finnish Lakeland, seemed to be the ideal place to try. Fortunately located between two lake systems, we were literally awash in the huge amounts of fresh water required to cultivate sturgeon. A handful of investors from the Åland Islands saw the viability of our idea and came on board.

It was extremely important that our farm wasted nothing and that we contributed to the local environment and economy as opposed to draining them. Our pools must be kept at +18C degrees and so are heated using the hot excess steam from the nearby Stora Enso paper mill. Our waste is also channeled to their management system which shares the philosophy of environmental responsibility that guides everything we do.

At long last our first harvest is upon us and we're confident that Carelian Caviar will thrill the palates of caviar enthusiasts around the world. So raise a glass of champagne or vodka and join in the celebration.
