Carelian Caviar & Blinis with Pickled Onions & Sour Cream

Caviar & Blinis is a classic dish that certainly deserves its famous reputation. These delightfully delicious pancakes, served with a spoonful of thick and fresh Russian sour cream, are a dream come true for any caviar connoisseur. And furthermore, as well as contrasting perfectly with the sour cream thanks to its silky texture, Carelian Caviar also decorates the dish in style.

Ingredients for blinis

10g yeast
250ml warm milk
150ml buckwheat flour
100ml Manitoba cream flour (protein-rich)
75ml sour cream
1 egg yolk
1 egg white
1 pinch of salt
Butter for frying

Ingredients for pickled onions

10 small red onions
200ml red wine vinegar
200ml fresh water

Preparation method for blinis

Firstly, dissolve the yeast in warm milk and add flour, sour cream, egg yolk and a pinch of salt. Next, whisk until smooth and then stand for 30 minutes while it ferments. Now whisk the egg white until it is still and then fold it into your batter. Bake your blinis in a pan with butter until they become full and fluffy. Cool them on paper towels.

Preparation method for pickled onions

Peel and trim your onions gently, then bring them to the boil in vinegar and water. Simmer for around 20 minutes. Remove and cool.

Serving

200ml Smetana (Russian sour cream)
100g of Carelian Caviar

Whisk your Smetana until it becomes firm. Next, using a hot spoon place a blini on a modest plate and add a small ball of Smetana on top. Now place your exquisite Carelian Caviar beside it. Finally, cut your pickled onions in half and place one half next to each portion of caviar. Serve immediately.
